The person who is competent in this CU shall be able to carry out hot kitchen cleaning, carry out cold kitchen cleaning, carry out show kitchen cleaning, carry out bakery & pastry area cleaning, carry out butchery area cleaning, carry out receiving area cleaning and carry out garbage / refuse room cleaning. The outcome of this competency is the ability to clean and sanitise kitchen areas by complying with establishment’s safety & hygiene standard and Standard Operating Procedure. |
