Penerangan CU | Perform Wet Cocoa Bean Processing describes competence in wet cocoa bean processing involves performing a sequence of steps and activities in the handling of freshly harvested cocoa beans while they are still moist. This process continues until the beans are dried and ready for use in the production of various cocoa-based products. The person who is competent in this CU should be able to carry out cocoa bean fermentation, carry out cocoa bean natural drying, carry out artificial drying, carry out cocoa bean sorting and packaging and carry out dried cocoa bean storage. The outcome of this CU is to ensure that the beans are properly prepared for subsequent processing stages and that they meet quality standards as outlined in the organisation’s Standard Operating Procedures (SOP), in compliance with Good Agricultural Practices. |
